Meemaw & Co Cooking

For Christmas we gave Meemaw a cooking class for the family. Join us on the 16th as we channel our inner Chef Ramsey and make an amazing dish together!
4 thick chicken breasts, preferably with skin
1 tablespoon neutral oil (canola, vegetable, avocado, etc.)
8 ounces mushrooms (cremini, shiitake, maitake, button, etc.)
10 ounces baby spinach leaves
5 cloves garlic
6 ounces cream cheese, room temperature
2 ounces feta cheese crumbles
1 bunch chives or green onions
6 tablespoons unsalted butter, cold
2 tablespoons all-purpose flour
½ cup dry white wine
1 cup chicken stock
2 pounds Yukon Gold or red rose potatoes
2-3 tablespoons olive oil
¾ pound (12 ounces) green beans
Salt and pepper
2 Sheet trays/cookie sheets, preferably lined with silicone baking mat or parchment
Cutting board (preferably 2 to avoid cross-contamination: 1 for chicken, 1 for produce)
Boning knife if you have it
Piping bag or strong Ziploc (freezer-style)
2 Medium skillets
Mixing bowl (medium to large)
Rubber spatula or wooden spoon x 2

Rochelle Van Der Merwe is a professional chef that has over 10 years of teaching experience, both for home cooks and also for professional chefs. She has worked in a variety of professional kitchens, ranging from fine dining restaurants to catering, to healthcare.
Chef “Ro” has a variety of tips and tricks that home cooks can use in their kitchens to ensure the best possible outcomes. She has experience teaching many ethnic cuisines as well as baking and pastry. She likes to teach the technique rather than the recipe so that home cooks can feel more confident in creating meals that are entirely their own.
