Fish Taco Cooking Class

Who does not love a good fish taco? Join Chef Ro as she teaches us how to make fresh fish tacos along with refried black beans and green rice that are all packed with flavor in our own kitchens.
1/2 cup neutral flavored oil such as avocado, canola, or vegetable
1 tablespoon ancho or chipotle chile powder
1 teaspoon ground coriander
½ teaspoon ground cumin
1 pound firm white fish (such as tilapia, halibut, or cod), cut into 4 pieces
1 teaspoon light brown sugar, or more to taste
1 fresh pineapple
8 garlic cloves
1 jalapeno (or other small green chile)
1 bunch cilantro
1 small red bell pepper, seeded and finely chopped
Kosher salt and freshly ground black pepper
1 can black beans
2 cups vegetable stock
1 cup rice (preferably medium grain rice)
1 small white onion 2 additional green chiles (poblano, jalapenos, or serranos)
Grill pan or large non-stick skillet
Fish spatula (or other spatula for cooking)
Medium (2-quart) saucepan with lid
Food processor or blender
